Banderitas de Coco: A Sweet Slice of Home for Mexican Independence Day

This year for Mexican Independence Day, I found myself longing for a piece of home. Living abroad has a way of making those moments of celebration bittersweet—especially when you’re far from the sights and sounds of the familiar parades and street vendors. But instead of feeling homesick, I decided to bake something that always reminds me of the celebrations back home: banderitas de coco.

If you’ve never tried them, banderitas de coco are these beautiful little coconut treats, layered in the vibrant colors of the Mexican flag—green, white, and red. They’re a sweet, chewy bite of coconutty goodness, and best of all, they’re incredibly easy to make!

Bringing Independence Day to My Kitchen

Making these banderitas gave me an instant connection to home. As I pressed the layers of sweetened coconut mixture into the pan and watched the colors come together, it felt like I was weaving a little bit of Mexico into my New Zealand kitchen. The colors alone make me feel like I’m celebrating alongside everyone back home, even from across the ocean.

In Mexico, these banderitas de coco are a common sight during big patriotic celebrations, like Independence Day and Revolution Day. The cities are filled with green, white, and red flags, streamers, and decorations—so naturally, food also takes on these iconic colors. It’s a way of sharing in the pride of our country, and it’s something that reminds me of how food has always been part of how we express our culture and traditions.

A Simple Recipe with Deep Roots

The recipe itself is wonderfully simple. You mix up shredded coconut with condensed milk, divide the mixture into three parts, and color each one red, white, and green. After layering them in a baking dish, let it set and slice into little flag-shaped bites.

What I love most about banderitas de coco is how they take me back to those days in Monterrey when local vendors would gather in the corners of supermarkets and streets to sell all sorts of mexican coloured goods and candy leading up to the celebrations of Independence Day. The air would be filled with excitement and pride. My family and I’d always indulge in delicious treats from local vendors, and banderitas were often part of our festive spread.

Families from Mexico City would head to the central square, or zócalo, for the Grito de Dolores on September 15th. The air would be filled with the sounds of people screaming “Viva Mexico!” mariachi and firecrackers popping in the distance. Back at home in Monterrey, we’d often join el Grito from the Macroplaza or watch el Grito from Mexico City on TV.

Coconut itself has a long history in Mexican sweets, brought over during the colonial period and incorporated into our many traditional recipes. But I think it’s the creative way we’ve adapted it, turning a simple ingredient into a symbol of national pride, that really shows the heart of Mexican food culture.
